The Tamarind is a fruit from African savannas, but very cultivated and consumed in the North and Northeast of Brazil. It is a very acidic fruit, containing tartaric acid, acetic acid, citric acid, sugars and has a unique bittersweet flavor, quite unlike of any other fruit.
